Mom always said, “A good day starts with a good breakfast.” And she didn’t mean a donut and coffee.
Trouble is, a healthy breakfast can take time. That’s something most of us busy moms and mid-life bloomers don’t always have a lot of. Rather than sacrificing nutrition for speed, use your crock pot. Put it to work overnight to have a hot, healthy breakfast ready when you are. Like this:
Easy Slow Cooker Oatmeal
1 cup steel-cut oats
1/3 cup chopped dates
2/3 cup raisins
1/3 cup craisins
1/2 teaspoon ground cinnamon
1/3 cup chopped almonds or walnuts
4 cups water
1/2 cup half-and-half (or plain nonfat yogurt)
Mix all ingredients together in a slow cooker before you head to bed. Set to low and cook for 8 to 9 hours. Stir to combine and serve.
I like to add a dollop of non-fat yogurt on top of my oatmeal as well as maybe a sliced banana or fresh sliced peaches. Mm! Mm! Good!
